My motto for the last few years has pretty consistently been “Ain’t nobody got time for THAT!”

Whether you are a jet setting career girl, juggling a kid or two or are just too lazy to spend any serious time in the kitchen, we could all use a quick fix to help us survive the plethora of holiday soiree’s coming our way.

When I’m really strapped for time, I try to go for dishes that have simple, delicious flavors that I can set and forget. It’s important for me to be able to toss something in the oven and go about finishing my hair or hiding my shoes in the back of the closet before guests arrive.

Part one of this series will look at “The bacon Brussels sprouts” this will not only convert anyone who has an aversion to food of the green variety, but it will allow you plenty of time for make up application in between stirring.

Bacon Brussels Sprouts

Active Cook Time: 10 minutes

Total Cook Time: 35 minutes

Ingredients

  • 1.5 lbs Brussels sprouts, stemmed and quartered
  • 2 small shallots, halved and sliced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 sliced thick cut bacon, diced
  • 1 tablespoon olive oil

How to cook

Start by cooking the bacon in a large nonstick pan on a medium low heat to get the bacon nice and crispy. The most important part is that you are rendering off the bacon fat.

When the bacon is crispy and browned, about 10 minutes, add in the sprouts, shallots, salt, pepper and olive oil.

Sautee the sprouts, stirring about every 5 minutes until the sprouts and shallots are lightly caramelized. Serve hot.
